Repeat after me: "Chocolate is a superfood and encompasses many health benefits that can provide some serious antioxidant action for you." Studies show that the darker the chocolate, the better. Well, only dairy-free 70% and above dark-chocolate that is.
Still, the daily dose of antioxidants in dark chocolate doesn’t give you license to indulge in a dessert free-for-all — dark chocolate is still loaded with fat and calories — so eat a max of 2 to 3 ounces a day.
Enjoy your new chocolate chip cookie fix without the guilt that fits into every gluten-free, paleo, vegan, dairy-free, egg-free household. And, did I mention they are absolutely delicious?
2 cups almond meal, or almond flour
1/4 cup coconut oil, softened (non-vegans can use butter)
2-3 tablespoons pure maple syrup
1/4 teaspoon sea salt
1/2 teaspoon baking soda
2 teaspoons vanilla extract
1/2 cup dairy-free dark chocolate chips (I prefer Enjoy Life from Whole Foods Market)
Preheat oven to 350F.
In a medium bowl, whisk together the almond meal, salt, and baking soda; then add the coconut oil, maple syrup and vanilla extract and mix well.
Fold in the chocolate chips, then drop batter by rounded tablespoons onto a baking sheet lined parchment paper.
Bake at 350F for 8-9 minutes, until the edges are golden brown.
